Cooking School - Leeks

Today I decided that I would use the leeks that I have in the fridge.  Martha had a lesson on them and I've tried cooking with them one other time and it didn't go good.

So the first step was to trim off the green parts from the top of the leek.  Here is what was left over
So you needed to slice the bottom off and cut in half length wise

There are two ways to wash the dirt from the leeks, fanning the layers when cut lengthwise
Or when they are sliced you soak them in a bowl of water

I decided that I was going to caramelize the sliced leeks to be used later
