Pete was out running around today and when he got home I gave him his options for dinner he decided on fried coconut shrimp with some of the coconut recipe that we had leftover from the other night.
I was amazed with how crispy the shrimp came out, here's a closer shot. I really gotta give it to the deep fryer.
I thought that it would need a dipping sauce but the shrimp were so tender they were great alone, anyway Pete liked it and used it. I started with some coconut milk and the pineapple from the Easter ham with some basil and cooked it down.
