Today Pete came home with the mail and in it was my Martha Stewart Cookbook. I was so happy and started reading it right away. Pete went to take a few runs so he could add today to his count for the year and I went to Evergreen to run some errands. When I got home I started some laundry and sat down to read some more. I came across a recipe for Chicken Piccata that sounded really good to both of us. So this was what I picked for my first official cooking school lesson.
Martha says always read the recipe so you know what your doing. I will admit that I don't always do this and sometimes it backfires on me. So I did what I was told and read everything.
My first step was to soak some capers
I butterflied my chicken breasts, wrapped them in saran wrap and pounded them out
I seasoned some flour and started breading the chicken
I sauteed the chicken up in two batches
And started the water for my pasta - This was something I added on because Mark and Tara were coming over and I wanted to have enough to feed everyone in case they were hungry.
When the chicken was done I started making the sauce. I took the white wine and deglazed the pan before adding my lemon and capers

So all in all I think that day one of home culinary school was a success. I did have to make extra sauce because we were eating it with pasta and the chicken could have been just a little bit crispier but it was good. It's sad to say but I think this was only the second time that I've cooked with capers. They are so good and under utilized. I'll have to find a way to fit them into more dishes in the future.
