French Onion Soup

So Martha has a recipe for homemade french onion soup that looked so good but, trying to cook out of the pantry and all, I opted to make a few changes.  First off I decided to use some organic boxed soup that's been in the pantry and I've been meaning to use.

Thank goodness that I decided to kick it up a bit and caramelize the other half of that onion from the other day.  I didn't follow the instructions, I used olive oil instead of butter, but they came out great. 
Into the broth they went over low heat while I waited to hear from Pete.
When he got home I jumped into action for the final few parts of this meal.  I threw the bread in a pan with olive oil to brown it up.
  The soup was ready to get it's toppings
I chopped the bread in two pieces
and topped that with a mix of grated mozzarella and parmesan cheese and under the broiler it went.
