Today has been a great day.  I have a wonderful surprise coming in 2 months, my mom!  I'm so excited and I know she is too.   She's always wanted to see Colorado so we'll have to take her all around.  It does mean that we'll be delaying our trip back east until next summer more than likely but I think it's worth it.  We're gonna have an awesome time!

Other than that, Pete left at the crack of dawn this morning to get to Vail for some powder.  He said he had a good day and that his knee is feeling much better.  When he got home we watched the truck race and tried to figure out some food.

Tonight we just had a light dinner of crustini.  I grilled up some bread, that loaf of italian bread has been really handy in the fridge.

and set out my other ingredients.  

I had decided that I wanted tomato, steak and blue cheese, all stuff I had laying around.  That's the best thing about crustini in my opinion, you can use whatever.

I started getting everything assembled then put it under the toaster oven broiler for 5 minutes

This is what it looked like when it came out and after the garnish.  I think it could have cooked more but Pete really hates burned bread and it looked like it was heading that way.
