Sausage, Pepper & Leeks - Having Fun in Colorado

Sausage, Pepper & Leeks

So now that I have my very close to the original Luger sauce, I really wanted to make something that was a perfect match and with stuff I already had in the house.

I had been craving a sausage hero so I decided to make a sandwich reminiscent of this amazing sandwich place we used to go to.  True to NY style it was in the most unlikely place, next to Home Depot in Long Island City, Queens.

I started with the veggies, Peppers, Onions, Leeks, and cooked them until they were nice and brown

I had some multigrain rolls in the fridge and even though you would use a soft white hero roll for this kind of thing I am trying to keep us as healthy as possible.  I tried to make it seem a little more decadent and toasted them up with a little garlic and butter.  I piled everything on the roll and topped it with some sauce.  Not too shabby, I enjoyed the healthiness of it while Pete wants me to give him the regular roll next time.  At least he tried it.
