This is a favorite of mine from 'Naturally Thin'. They take a bit of time but I think it's well worth it.

First step is to pound out the chicken after you butterfly the breast, top with feta and chopped sundried tomatoes and seasonings.
I used spike and salt & pepper.
Carefully roll them up. I needed to tie these but in the past they held together better.
I pan fried them and Pete and Steve enjoyed them for dinner one night when he was over.

I made these awhile ago but I thought it was time to get some of my cooking posts out there. I was in the mood for chocolate one night and only had Chocolate Chocolate Chip Cookie Mix and I really wanted this with ice cream so I decided to make bars instead of the recommended cookies. They came out great and here is a quick shot of them.

Pete and I were watching Food Network last night and when I saw this I passed it on to family members so we can plan a trip when Pete and I are back on the East Coast.
"Flo's Clam Shack" in Rhode Island makes this amazing full belly clam sandwich along with a ton of other freshly fried seafood dishes. I can't wait to get there so I can try one of these bad boys. The fish and chips looked amazing too!

"This" makes me so sad. The famed Tavern on the Green has been turned into a snack bar. After the restaurant filed for Chapter 11 in September 2009 the new owners and the union haven't been able to negotiate a contract that will get it up and running again. It seems in desperation Michael Bloomberg, mayor of NYC, is trying to make the best of a bad situation and decided it should be made a tourist center and snack bar. On Regis & Kelly last week Regis said Donald Trump should take it over, and I have to agree that it's the best idea. The Donald was quoted as saying “If I could help the city and the city wanted me to get involved, I could be open”. “It really is a special place. Only a person with a lot of money can rebuild and resurrect Tavern. And I have a lot of money.”

As you all know I love Jackie O! She is one of my favorite style icons. She made looking chic so easy because all you needed were simple lines and a pair of huge sunglasses. That's totally the way I dress. Anyway, The Post had an article titled "Jackie 2.0" so I decided to check it out figuring they were talking about some new socialite on the NY scene. I was right, in a way.
The article is about Rose Kennedy Schlossberg the daughter of Caroline Kennedy and Granddaughter of Jackie Kennedy-Onasis. She graduated from Harvard this month and they are saying that she will be impossible to ignore since they look and act alike. From what the article said Jackie made it a mission to see Rose every day to instill lessons she thought were essential to life until she died in 1994 when Rose was 5. It also said that she's a leader in the Kennedy clan and has a bit of an independent streak, just like Jackie. It'll be fun to see what she takes on. Talk about big (and fashionable) shoes to fill.

Mark Twain spent the last 10 years of his life writing his autobiography and now in November you'll be able to read the first volume. He left strict instructions that it was not to be published until he had been dead 100 years. The University of California, Berkley, where the manuscript has been vaulted will be releasing it in 3 volumes. I personally can't wait to read it.

I read this "article" in the post and almost fell over laughing. If only this had been in place when we lived there. Lanes have been painted in NYC so there is a 'fast' lane for people who live there and a 'slow' tourist lane.

So even thought I had distractions during the final 7 hours that it took for Lost to end it was better than what happened to fans of the show in Cleavland, OH
While the finale was playing viewers couldn't watch it because it was 'pixelated, jumpy, choppy.' My guess is that those were Time Warner customers. I know that anytime I wanted to watch something that's what happened to me. Apparently people were so mad they rioted and ended up the number one story on the evening news. Now that's some pissed off customers.

According to the "Village Voice" Spike Lee had been tasked with helping Absolut Vodka come up with the branded Brooklyn version. The bottle below is said to be Spike's stoop in the 'hood where he grew up. The vodka is said to have "a fresh and distinct character of ripe apples with a slight hint of ginger," according to a press release. Too bad I don't drink this brand or I would definitely buy a bottle. Might be a little hard to find here since it's a limited edition.

Wow, so it's sure been awhile since I've posted anything. Today Pete and I took care of our Epic Passes. One less thing to worry about for this winter at least. We need one good season here before we can even think of moving.
So good news "Wide Open Adventure" has hired me to help out in the office! Here is a shot of one of the guides trying to hang the sign.
I have been really busy trying to help out wherever I can. Patti, the Office Manager, was nice enough to invite me on her birthday rafting trip, the Thrill Seeker. It's class 3 & 4 rapids and it was a little nerve racking to do them the first time I've even been on white water but I'll admit it was fun. Here is a shot of me in my sexy rafting outfit:
I also got a job as a secret shopper. It pays really good and I get to shop for free! One of my first assignments is to spend $100 at Wal-Mart on whatever I want and then review my transaction. Eventually it can evolve to vacations, jewelry, restaurants and clothes. So I'm pretty excited about it. There is a minor issue that I'm hoping to fix on Tuesday, my UPS package was sent to a PO Box but at least according to the tracking notes it's in Colorado. So things seem to be looking up in Colorado!

So as usual Pete and I were watching racing last night and Bret Raymer, while driving his truck, burst into flames. I've never seen a truck just go up while driving and not after an accident.

Heroes is being sued by Jason Barnes, a comic book author, who states that the traveling carnival storyline featured in the last season was a rip off. So much for the show going away quietly.
The lawsuit states:
"The settings and the storylines are virtually the same. The main character in both stories leads a carnival of lost souls and outcasts. This dark character seeks to make his carnival more powerful by recruiting new members with special abilities. The appearance of some of the characters is also virtually identical to those in the plaintiff's books… Even the dialogue is similar. Indeed, some of the scenes inHeroes appear as if the plaintiff's books were used as storyboards by the defendants."

The website Profiles in History is hosting an "auction" for items from the TV show. So far only 100 items are listed but I've read that people are expecting up to 1000 show items to be listed after the finale on Sunday night.

I was so happy to heat that the 'final' season will be filmed in NYC. Supposedly Larry David said last season was his last so there might be another one in the future. I think the show, great as it is, will have a little more of a Seinfeld feel and I have to admit that I love seeing NY on TV. It's amazing how much you hate it when you live there and miss it when you're gone.

I was watching the 1st part of the finale for The Celebrity Apprentice the other day to see who made it to the final 2. I never thought that I would say this but I'm really happy that Bret Michaels made it. He did a pretty good job and I think this show displayed his real personality better than Rock of Love did.
Unfortunately, Sharon Osborne was fired. She was the one that I was watching the show for. Ever since seeing the promo where she said 'I'm married to the Prince of Darkness just try to scare me.' I love a woman who can take her husbands career to the next level, in an industry that isn't very women friendly mind you. That is a bad @ss business women in my opinion. It has to be that English accent. You can be a real bit@h and you still sound so sweet.
Anyway, while in the Board Room Sharon said something that really resonated with me, 'I worked for everything myself so i don't owe anyone anything.' So true, and it explains my new mindset.

I've just spent the last hour arguing and trying to fix the auction I put up this morning. Pete is selling a piece of his gear and our ebay ad clearly states US bidders only. A guy from France e-mailed me and then without waiting to hear what I said bought it. When I told him there were other people interested he just kept asking if I would ship to France. I spoke with Ebay and they told me I didn't have to sell to him if I didn't want to. Thanks @ss for messing up the original listing, I ended up having to re-list it with a new number, so the original people watching it think it's been bought. Then to top it all off his sent me a little note in french at the bottom of one of his messages. Nothing nasty, like I originally thought, but still what's up with that? Just more of the french arrogance coming through? I wrote back letting him know that it was a nice attempt to baffle me but I understood. For some reason I haven't heard back. And even if I didn't speak it who can't use Google Translator? Jerk!

So as I mentioned in an earlier post NYC Housewife (Countess) Luann De Lesseps recorded a single that was released on ITunes. I posted some studio video that was on the after show and it wasn't good. Today while watching the Martha Stewart Show I saw this amazing "pork recipe" made with an Ecuadorian marinade, something that I will HAVE to try, it looked amazing! Anyway, they mentioned that you should never just cover meat with just tin foil when it's going to cook in the oven. They suggest protecting the meat with a layer of parchment paper between the meat and the foil to stop any sort of reactions that can change the flavor of the meat. Good to know.

So I'm trying to use up the first batch of lentils I pulled out of the freezer. I'll say they held up pretty good, a little watery but not too bad. I pulled out some shrimp to defrost but no matter how much comes out of the freezer it still seems packed full. Not a bad thing I guess.
I seasoned the shrimp with some Old Bay Seasoning and cayenne pepper. I let them sit in the fridge for about an hour before I sauteed them up with some olive oil.

Since today was really nice and Pete decided to call Steve, the guy who introduced him to the raft company owner, to see if he wanted to hit the Creek. I thought it would be cool to take some video of him on his first trip past the house. So here it is, Enjoy!
So since we're on the subject of rafting I thought I'd share a few funny things that Pete said is common for tourists to ask:
At what elevation do deer turn to elk?
I know we're in the Rockies but this isn't an enchanted forest! They are two different animals for anyone who doesn't know.
Where do you put the mogels in the summer?
Mogels are the ski bumps that you see people race in competitions. Mogels are formed when the powder snow gets skied or 'bumped up' and until the trail is groomed they remain there. They aren't installed in any way shape or form. I think that would be really dangerous.
How do you get the trees to turn such a pretty shade of red?
Well for this we can thank the beetles that are eating our trees. All the red patches that you see in the forest, and there are a lot, are dead trees and no one is happy about it.

A bidder paid $20,000 for a lunch date, make over and photo shoot with the 'world's first supermodel'. According to Janice, "Whoever they are, they're going to get a lot more for their money than they paid."

So today I finally took the time to plan out mom's trip so we can fit in as much as possible. She recently saw "Kelly Linken" on Food Network and saw she was from Vail. Don't get me wrong the place looks great it's just expensive and doesn't fit into this trip, we aren't even going that far west. Next time my parents are here we can all go out for a nice dinner plus she already has a chef, moi, here to cook anything she wants. (Menu planning is the next step)
So here is a quick list of all the fun stuff we'll be doing on her first trip to Colorado:
Saturday June 12th - Idaho Springs
This will be her first day at altitude so we're taking it easy. We'll do the quick walk around town and then come home to relax. A few of the things they suggest for altitude sickness are exercise, keeping hydrated and fruit. This should be a good test to see how she'll be affected.
Sunday June 13th - Colorado Rockies Game vs Toronto
Thankfully this will get her down to only a mile up in the air. Hopefully that blast of oxygen in her system will make her feel good as new. I think everyone is looking forward to going to the game, we're all baseball fans. We'll be hitting Whole Foods on the way home to grab some clams, hopefully, for dinner.

Monday June 14th - Continental Divide/Breckenridge/Outlets/El Rancho Dinner
This is the start of heading to a little higher elevation. We'll drive up Loveland pass to the Divide for a few quick pictures. We'll take a walking tour of the shops in Breck, maybe even try out the Oxygen Bar, then hit the outlets in Frisco. We'll head to "El Rancho Colorado" for an authentic Colorado dinner. I can't wait to try some of the more exotic things on the menu.
Tuesday June 15th - Coors Brewing Tour/Mt. Evans Drive/Campsite Dinner
We'll head to Golden and take the free tour at the brewery. Then take the scenic drive over Mt Evans from Evergreen to the West Chicago Creek campsite where we'll eat and have a camp fire until it gets cold.
Wednesday June 16th - Rocky Mountain National Park/Casino Dinner
A drive through Rocky Mountain National Park and dinner in Black Hawk. At Gilpin Casino they have a great "dinner special". Gotta show off the only night life we have.
Thursday June 17th - Flying out, the trip is over
This is her final day where we have nothing planned. Just hanging around the house until we have to leave for the airport.
