So I put a bottle of my garden style sauce to use with this dinner. It's originally Pete's mom recipe. I spiced it up a bit with carmelized onions and it was amazing. Definitely the best its ever come out. Everybody loved it and we all decided it will be an awesome crock pot dinner for ski season.

Pete got some peaches at the grocery store the other day but the organic grapes we grabbed the same day were so good the peaches were forgotten about. I went thru the fridge and noticed them so while I was cooking I decided to throw this in too. We'll be having it for dessert after dinner tonight so I'll have a garnished pic tomorrow.

So on my last day off this week I decided to make some progress with my tomatoes. I made sauce 2 ways, chunky & blended plus fresh tomato juice.
I boiled my sauce tomatoes yesterday and took the skins off this morning while we waited for the cable guy. I squeezed the tomatoes and got the other veggies going. Squeezing that many tomatoes can be a mess, let me tell ya. Anyway I managed to save all the juice, that I de-seeded with my cheese cloth.

Pete noticed at the farmer stand the other day that you could buy an entire box of tomatoes for $20. Since we tested them the day before, you'd be surprised how hard it is to find a decent tomato here. So I sorted them into three groups, to use raw, to use for sauce and to be canned whole. It's a lot of work but its so worth it.
BTW- this picture is about a quarter of what was in the box. Plus she threw in some zucchini and a pepper.

So on my last day in Idaho Springs I finally had a run in with the cops. Well, not really it was an almost run-in.
I was driving the 2 blocks from the post office to the apartment to meet up with the manager for our final walk thru and didn't have a seat belt on. In Colorado its a secondary offense so you won't get a ticket if you aren't doing anything wrong. Anyway as I pass him I see him pull out. I make a turn and so does he. By time I pulled in a parking spot out front, after putting my seat belt on just in case, and get out he cruises by and gives me a look. I wish I had my camera ready to take his pic. That would have surprised him. Anyway that was it. No more harassment from the po'. I'm so happy to be out of there.
