I've been on a bit of a seafood kick lately and I decided to use up some stuff in the fridge for a quick and healthy meal.
15 shrimp - peeled & deveined
1 cup rice
1/2 cup sauteed veggies
2 T butter
T chopped fresh herbs, I used tarragon
Steam shrimp. Take prepared brown rice and prepared sauteed veggies and mix. Melt butter with fresh herbs. Plate with shrimp over rice and drizzle with butter.
