This is a favorite of mine from 'Naturally Thin'.  They take a bit of time but I think it's well worth it. First step is to pound out the chicken after you butterfly the breast, top with feta and chopped sundried tomatoes and seasonings.  I used spike and salt & pepper.Carefully roll them up.  I needed to tie these but in the past they held together better.  I pan fried them and Pete and Steve enjoyed them for dinner...

This was something that I found on Martha's site while I was skimming recipes.  Who doesn't love animal pics especially when they're this cute.  ...

Today while watching the Martha Stewart Show I saw this amazing "pork recipe" made with an Ecuadorian marinade, something that I will HAVE to try, it looked amazing!  Anyway, they mentioned that you should never just cover meat with just tin foil when it's going to cook in the oven.  They suggest protecting the meat with a layer of parchment paper between the meat and the foil to stop any sort of reactions that can change the flavor...

So I'm trying to use up the first batch of lentils I pulled out of the freezer.  I'll say they held up pretty good, a little watery but not too bad.  I pulled out some shrimp to defrost but no matter how much comes out of the freezer it still seems packed full.  Not a bad thing I guess. I seasoned the shrimp with some Old Bay Seasoning and cayenne pepper.  I let them sit in the fridge for about an hour before I sauteed them...

Since today was really nice and Pete decided to call Steve, the guy who introduced him to the raft company owner, to see if he wanted to hit the Creek.
