3.2.10 - Having Fun in Colorado

3.2.10

Pete took the day off today and tried to get his knee to feel a little better.  It seemed to be going good last week but the last few days he said it's almost back to feeling like it was in the very beginning.  I need to get my 40 hours at the agency so I can sign up for insurance.

Today was the first day that I dragged my butt to the gym to use the elliptical machine.  They look so harmless.

 

There was no one in the office so I couldn't ask how to program the thing so I figured that I was smart enough to get it to work.   On the panel it said that the simple workout program was hitting start twice.  So that's what I did, it asked for my weight and I couldn't figure out how to change it so I stuck with 150 and off we went.  I was very enthusiastic the first 3 minutes, boy was that a mistake.  My lungs were burning by minute 6 and by 8 I was done.  Now it might not sound like it, but today was actually a success in my eyes.  I saw that noonish during the week is an OK time to go, it's really great for the pool, no kids.  I think it might be best at 8:30 when they first open.  I've been sleeping in to about 9:00 the past couple of days since I've been waiting for Pete to get home from the city and it's thrown my schedule all off.  I also learned to never, ever forget your water bottle.  So next time my goal is to stay on that thing for at least 20 minutes.  My ultimate goal is an hour so I'm trying to be practical and work up to it at a reasonable pace.

When I got home Pete was ready to have some lunch.  The other day he wanted me to make a sandwich with the pulled pork, sliced ham and melted cheddar cheese.  His plans changed and he had dinner with a friend that night instead.  So I figured that I could make it today.

We puttered around the house today until it was time for LOST



We didn't get to watch last week so we watched the previous week repeat before the new episode.  There are only 10 episodes left in the series and I still have no idea what is going on.  Last week we were supposed to understand a few more things but I guess I missed it. 

We had dinner while we were watching which is something that I'm not supposed to do on my diet but I made an exception tonight.  We had a recipe that I was experimenting with.

Kielbasa with Sauteed Vegetable Saffron Rice over Lentils with Red Beans
 

It was really good.  No real recipe but here's what I did.

1.  Make Saffron Rice from package (look for a gold/yellow package) in rice cooker
2.  Cut Polish Sausage on the bias and fry until browned
3.  Take leftover sauteed yellow pepper and onion and add to cooked rice
4.  Mix Rice & Meat and Bake in a casserole dish at 350 for 20 minutes or until rice is fluffy
5.  Mix 1 can red beans with Lentil Mix, shown below



I plated the lentils on the bottom and topped with 2 scoops rice then meat and a sprinkle of parsley.  Pretty simple and the packaged lentils are really good.
